A Punjabi dhaba that grew into Kota's pure-veg institution.

The kitchen

Fed by habit, not by trend

Amar Punjabi Foods & Dhaba has been cooking in Kota for more than fifty years. What began as a few charpoys beside the highway is now two busy kitchens, a catering team and a delivery fleet — still run by the same family, still entirely vegetarian.

Our butter paneer, dal tadka, malai kofta and lachha paratha taste the way regulars remember them because the method has never changed: fresh produce every morning, ghee not oil, and gravies that are allowed to take their time.

Our journey

Five decades, one recipe book

  1. 1971

    A roadside dhaba opens on the Rangbari road, serving truckers dal, roti and chaach.

  2. 1989

    The family adds a sit-down restaurant as Kota's neighbourhoods grow around them.

  3. 2004

    A second kitchen opens near Kota Railway Station and train food delivery begins.

  4. 2016

    Wedding and corporate catering becomes a full service with its own team.

  5. Today

    Order online for home delivery, takeaway or dine-in — the recipes have not changed.
